Everything Muffins


​So there are these Gluten Free Carrot cake like muffins from Pressed Cafe that I think about often. They don't always have them when I go, but I always ask for them and get one when they do. They are these somewhat heavy, dense, but moist delicious muffins.

Well today I had some over ripe bananas as I usually do when I by a bunch from the day old rack. Hubs requested Banana Bread, however I came across these scrumptious looking muffins from Simply Beautiful Eating. Of course they were not Gluten Free, so if I made them it would be a bit of an experiment and a gamble. I went for it and they were awesome. I used no real strategy for the mixing, but I usually mix the dry with the dry and the wet with the wet. Do that, combine the wet and the dry then fill up your muffin cups. I used Paperchef brand baking cups. I used some regular size with 1/4 cup of batter and some tulip cups with 1/3 cup of batter. I really like the tulip cups for that bakery style feel. These are beautiful and delicious for entertaining. I also made some with the crumb topping and some without. You save about 75 calories per muffin if you skip it and they are still amazing. Bake @ 375 for 25 minutes. Perhaps 5-7 minutes longer for the tulip cups.

  • 1 Cup, White Rice flour

  • 1 Cup, Almond Flour

  • 1/2 Cup, Brown Rice Flour

  • 1/2 Cup Gluten Free Rolled Oats

  • 1 tsp. Cinnamon

  • 2 tsp. Baking Powder

  • 1/4 tsp. Salt

  • 1 1/2 cup Blueberries

  • 4 Medium Banana

  • 2 medium Carrots Grated

  • 1 cup Brown Sugar

  • 2 large Eggs

  • 2/3 Cups Greek Yogurt or Sour Cream

  • 2 tsp, Pure Vanilla Extract

  • 1/2 Cup Coconut

  • 1/2 CupApplesauce
