Breakfast Pizza

1 Gluten Free Brown rice wrap from Food for Life

1/2 fresh large tomato

1 tsp. Oregano

1 tsp red pepper flakes

2 cups spinach

1/4 cup-sliced mushrooms

1 Scrambled egg

1 tbsp Ricotta

Salt and pepper to taste

1 slice cheese of choice (optional)

1. Scrambled egg and set aside

2. Pan sear tomatoes and sauté in spinach and mushrooms.

3. Toast brown rice tortilla 

4. Place cheese directly on toasted tortilla

5. Layer all toppings and eggs while hot to melt the cheese. 

6. Add Ricotta

7. Sprinkle with salt, pepper, oregano and red pepper flakes.
